Coconut sugar, also known as coconut palm sugar or coconut blossom sugar, is a natural sweetener derived from the sap of coconut palm tree flowers. It is an alternative to refined sugar and is gaining popularity as a healthier and more sustainable option.

To produce coconut sugar, the sap is extracted from the flower buds of the coconut palm tree. This sap is collected by making a small incision in the flower stalk and allowing the sap to flow into containers. The sap is then heated to evaporate the moisture, resulting in a thick syrup. The syrup is further cooled and crystallized to form granules or blocks of coconut sugar.
