Toddy, also known as palm toddy or palm wine, is an alcoholic beverage that is derived from the sap of various palm trees, including coconut palms, date palms, and others. It is a traditional alcoholic drink that is popular in many tropical regions around the world.

To produce toddy, the sap is extracted by tapping the unopened flower buds of the palm trees. A spadix or a specialized container is attached to collect the sap as it flows out. The sap is sweet and contains natural sugars. If left undisturbed, the sap will naturally ferment due to the presence of yeasts and bacteria in the environment.
