Food & Beverages:
Any raw, cooked, or processed edible substance that is used or intended for use in whole or in part for human consumption is known as Food & Beverages.
Food is any substance that is consumed by an organism for nutritional support. It is usually made from plant, animal, or fungal origin, and contains essential nutrients, such as carbohydrates, fats, proteins, vitamins, or minerals. Food is ingested by an organism and assimilated by the cells of organism to provide energy, stimulate growth or maintain life.
Beverage or drink is a liquid intended for human consumption. It plays an important role in human culture in addition to their basic function of satisfying thirst. Plain drinking water, milk, juice, smoothies and soft drinks are common types of beverage. Coffee, tea, and hot chocolate. Caffeinated drinks are traditionally warm beverages. Non-alcoholic drinks are made with a sufficiently low concentration of alcohol by volume and often signify drinks that would normally contain alcohol, such as beer, wine and cocktails. Non-alcoholic drinks usually undergo an alcohol removal process such as non-alcoholic beers and de-alcoholized wines. Alcoholic drinks such as wine, beer, and liquor, contain the drug ethanol.
Classification of Food:
Any substance that is consumed to provide nutritional support and energy to an organism is known as food. Food is mainly composed of lipids, water, proteins and carbohydrates. It also contains Minerals such as salts and organic substances such as vitamins. It is available in the form of raw, processed or formulated and is consumed orally by animals for growth, health or pleasure. Photosynthesis are used by slants, algae and some microorganisms to make their own food molecules. Water and fiber have low calories or energy densities, while fat is the most energy dense component.
Human food is classified either by related content or by how the food is processed. Although the number and composition of food groups can vary, four basic groups that describe their origin and relative nutritional function are generally included in most systems. Vegetables and Fruit; Cereals and Bread; Dairy and Meat are the four basic groups of food. Often food is grouped into whole grains/cereals, refined grains/cereals, vegetables, fruits, legumes, nuts, eggs, dairy products, fish, red meat, processed meat, and sugar-sweetened beverages.
A system with nineteen food classifications including cereals, roots, pulses and nuts, milk, eggs, fish and shellfish, meat, insects, vegetables, fruits, sweets and sugars, fats and oils, spices and condiments, beverages, foods for nutritional uses, food additives, composite dishes and savory snacks is used by the Food and Agriculture Organization and World Health Organization.
Food sources:
The sources of food are:
Sunlight and soil:
- The ultimate source of energy and food for nearly all life on earth is Photosynthesis which is the main food source for plants, algae and certain bacteria.
- Energy from the sun is absorbed in the process of photosynthesis and used to transform water and carbon dioxide in the air or soil into oxygen and glucose.
- Then the oxygen is released and the glucose is stored as an energy reserve.
- Important nutrients and minerals are absorbed by plants from the air, water and soil. Carbon, oxygen and hydrogen are absorbed from the air or water which are the basic nutrients needed for plant survival.
- Nitrogen, phosphorus and potassium are the three main nutrients absorbed from the soil for plant growth. Other important nutrients including calcium, sulfur, magnesium, chlorine, manganese, iron boron, zinc, copper molybdenum and nickle are also absorbed.
Plants:
- Plants as a food source are generally divided into seeds, fruits, vegetables, legumes, grains and nuts.
- Seeds, nuts and grains are technically fruit, as food is a fruit if the part eaten is derived from the reproductive tissue.
- Grains can be defined as seeds that humans eat or harvest, with cereal grains such as rice, oats, wheat, corn, barley, rye, sorghum and millet.
- Whole grains are foods that contain all the elements of the original seed including bran, germ, and endosperm.
- Nuts are generally dry fruits and are distinguishable by their woody shell.
- Fleshy fruits can be further classified as pome fruits (apples, pears), berries (blackberry, strawberry), stone fruits (cherries and peaches), citrus (oranges, lemon), melons (watermelon, cantaloupe), Mediterranean fruits (grapes, fig), tropical fruits (banana, pineapple).
- Any other part of the plant that can be eaten, including roots, stems, leaves, flowers, bark or the entire plant itself are referred as Vegetables.
- Root vegetables (potatoes and carrots), flowers (cauliflower and broccoli), bulbs (onion family), leaf vegetables (spinach and lettuce) and stem vegetables (celery and asparagus) are all included in Vegetables.
- Plants contain high carbohydrate, protein and lipid content, with carbohydrates mainly in the form of starch, glucose, fructose, and other sugars.
- Most vitamins are found from plant sources, with exceptions to vitamin D and vitamin B12.
- Although the presence of phytates can prevent the release of minerals, these are also present in some extent.
- Generally, Fruit consist of up to 90 percent water, high levels of simple sugars that contribute to their sweet taste and have a high vitamin C content.
- Vegetables are high in starch, potassium, dietary fiber, folate and vitamins and low in fat and calories as compared to fleshy fruit (excepting Bananas).
- Grains are usually more starch based and nuts have a high protein, fibre, vitamin E and B content.
- Seeds are considered as a good source of food because they are abundant and contain fibre and healthful fats, such as omega-3 fats.
Animals:
- Animals are used as food either directly or indirectly, including meat, eggs, shellfish and dairy products like milk and cheese.
- All of these are an important source or protein.
- These food are considered complete proteins for human consumption as they contain all the essential amino acids that the human body needs.
- Food products produced by animals include milk produced by mammary glands, which is drunk directly or processed into dairy products (cheese, butter, etc.).
- Birds and other animals lay eggs, which are often eaten by humans.
- Bees produce honey, a popular sweetener in many cultures which is a reduced nectar from flowers.
Production of Beverages:
Beverage or drink is a form of liquid which has been prepared for human consumption. A number of different steps, some prior to transport, others immediately prior to consumption are included in the preparation of drink.
Purification of water:
Water is the primary ingredient in most drinks. It is purified prior to drinking. Filtration and the addition of chemicals, such as chlorination are methods for purification.
Pasteurization:
The process of heating a liquid for a period of time at a specified temperature, and then immediately cooling it is called as Pasteurisation. The time before spoilage can be increased as the growth of microorganisms within the liquid can be reduced by this process of pasteurisation. The process of pasteurisation is primarily used on milk, which is commonly infected with pathogenic bacteria prior to pasteurisation.
Juicing:
Juice can be extracted from fruits and vegetables in many forms. Although a more intense pressure can be applied to get the maximum amount of juice from the fruit, a significant amount of liquid can be extracted with simple crushing of most fruits. Both crushing and pressing processes used in the production of wine.
Infusion:
The process of extracting flavours from plant material by allowing the material to remain suspended within water is known as Infusion. This process is used in the production of teas, and herbal teas. It can also be used to prepare coffee when using a coffee press.
Percolation:
Percolation is a process in which a solvent is allowed to pass through a permeable substance especially for extracting a soluble constituent. The solvent is water in the case of coffee-brewing. The permeable substance is the coffee grounds, and the soluble constituents are the chemical compounds which give coffee its color, taste, aroma, and stimulating properties.
Carbonation:
The process of dissolving carbon dioxide into a liquid, such as water is known as Carbonation.
Fermentation:
Fermentation is a metabolic process in which sugar is converted to ethanol. Grape juice is combined with yeast in an anaerobic environment to allow the fermentation in winemaking.
The alcohol level and the sweetness of the wine is determined by the amount of sugar in the wine and the length of time given for fermentation. There are four primary ingredients including water, grain, yeast and hops when brewing beer. A process known as malting is used for the grain to germinate by soaking and drying in heat and it is then milled before soaking again to create the sugars needed for fermentation in the process of mashing. Hops are added for flavouring, and then the yeast is added to the mixture which is now called wort to start the fermentation.
Distillation:
A method of separating mixtures based on differences in volatility of components in a boiling liquid mixture is known as Distillation. This method is used in the purification of water and is also used for producing spirits from milder alcoholic drinks.
Mixing:
Cocktail is an alcoholic-mixed drink that contains two or more ingredients. It was originally a mixture of spirits, sugar, water, and bitters. But, now it is often used for almost any mixed drink that contains alcohol, including mixers, mixed shots, etc. Usually, it contains one or more kinds of spirit and one or more mixers, such as soda or fruit juice. Sugar, honey, milk, cream, and various herbs can be used as additional ingredients.
Types of Beverages:
Non-alcoholic drinks:
Non-alcoholic drinks are type of drink that contains little or no alcohol. Low-alcohol beer, non-alcoholic wine, and apple cider are included in this category if they contain a sufficiently low concentration of alcohol by volume (ABV). Drinks such as soda pop, sparkling water, iced tea, root beer, fruit punch, lemonade, milk, hot chocolate, tea, coffee, milkshakes, and tap water and energy drinks are all soft drinks which does not contain alcohol.
Water:
The most consumed drink in world is water. Fresh water is generally found in rivers, lakes, wetlands, groundwater, and frozen glaciers.
Milk:
Milk is the primary source of nutrition for babies and is regarded as one of the original drinks.
Carbonated drinks:
Carbonated drinks have carbon dioxide dissolved into them which can happen naturally through fermenting and in natural water spas or artificially by the dissolution of carbon dioxide under pressure. Cola, orange, ginger, various roots, and lemon/lime are commonly used to form non-alcoholic carbonated drinks. Sugars and preservatives may be added later to the drink.
Juice and plant drinks:
Fruit juice is a natural product that generally do not contain additives. Citrus products such as orange juice and tangerine juice, grapefruit juice, pineapple, apple, grape, lime, and lemon juice are some of the common juice used as drink. Coconut water is a nutritious and refreshing juice. Usually Vegetable juices are served warm or cold. Carrots, tomatoes, cucumbers, celery and many more different types of vegetables can be used to make vegetable juice. Plant milk is any milk-like product that is derived from a plant source. Soy milk, almond milk, rice milk and coconut milk are the most common varieties.
Alcoholic drinks:
Alcoholic drinks are type of drink that contain Alcohol. Beer is an alcoholic drink that is produced by the saccharification of starch and fermentation of the resulting sugar. Cider is a fermented alcoholic drink made from fruit juice. Most commonly and traditionally apple juice is used to form cider, but the juice of peaches, pears or other fruit can also be used. Wine is an alcoholic drink which is made from fermented grapes or other fruits. They can ferment without the addition of sugars, acids, enzymes, water, or other nutrients because of the natural chemical balance of grapes.
Hot drinks:
Coffee, Tea, Herbal tea and Hot chocolate are the most consumed hot drink in the world. Coffee is a brewed drink which is prepared from the roasted seeds of many species of an evergreen shrub of the genus Coffee. Tea is produced from infusing dried leaves of the camellia sinensis shrub, in boiling water. Tea is prepared in many different ways for consumption.
