What is Brown Rice:
Brown Rice is a whole-grain rice that has only had the outermost layer (the hull) removed without bran and germ intact. Brown rice is a good source of magnesium, phosphorus, thiamine, niacin, vitamin B6, selenium and manganese, and is high in fiber. Germinated grains in general have nutritional advantages. Germinated brown rice (GBR), developed during the International Year of Rice, is brown rice that has been soaked for 4 to 20 hours in warm 40 °C (104 °F) water before cooking. Germination is stimulated by this, giving rise to a more complete amino acid profile, including GABA by activating various enzymes in the rice.
Cooked brown rice tends to be chewy whereas cooked GBR is softer, and preferred particularly by children. Generally, brown rice needs longer cooking times than white rice. It has a lower glycemic index. So, is less likely to contribute to type-2 diabetes. It has more fiber and micronutrients.

Types of Brown Rice:
The bran layers that remain on the rice when it goes through the hulling process is the factor for which Brown rice gets its color, flavor and texture. It retains the bran layers as it is milled for less time than white rice and is therefore known for being a healthy source of fiber. It has nut-like flavor and a chewy texture. Varieties of brown rice such as Jasmine or Basmati still contain their germ and bran layers, providing a range of important nutrients including B vitamins, bone-building phosphorus, and magnesium. Short grain, medium grain, long grain and light brown are four different types of brown rice. Each of these varieties takes a different amount of times to cook.
Short Grain Brown Rice:
Short grain brown rice consists of small kernels and has a very sticky texture when it is cooked. Therefore, it is used for rice puddings and similar desserts, as well as risotto. Generally, this rice requires 25 minutes of cooking time after being soaked overnight.
Medium Grain Brown Rice:
Medium grain brown rice is larger and has more plump than the small grain variety. But it is not as large as the long grain. It becomes moist and tender when cooked, making it an excellent component for soups, salads and side dishes. This type of brown rice is done in 15 to 20 minutes when soaked for at least four hours and cooked with two parts of salted water.
Long Grain Brown Rice:
People are most familiar with the long grain variety. This type of rice has a golden brown color, chewy texture and nutty flavor. Long grain brown rice is generally used in a variety of dishes, such as rice pilaf and stir-fry. It requires 45 minutes of cooking time for Long grain brown rice.
Light Brown Rice:
Brown rice becomes light brown rice when half of the bran is removed during the milling process. The rice kernel has a light brown color, slightly nutty flavor and less fiber. It has a significantly shorter cooking time than regular long grain brown rice. It may take 20 minutes to cook.
